Foodservice consumers are moving away from mass-market coffee and seeking high-quality, speciality-grade options, with sustainability now at the forefront of consumers’ minds when purchasing coffee.

Speaking to Better Wholesaling, Lynsey Harley, founder of Modern Standard, the principal coffee supplier for Delice de France, explained that consumers are demanding ethically sourced coffee and clear green-led commitments: “Sustainability, the rise of speciality coffee and innovation are the three biggest trends in the hot beverages market right now.”

Looking towards the future, Harley foresees a greater demand for plant-based options, with oat almond, and soy milk continuing to dominate, as well newer alternative milks entering the scene. “We are also seeing a trend towards home-brewing, as more consumers invest in at-home coffee set-ups, meaning cafes and retailers need to offer exclusive experiences to keep footfall.”

Modern Standard offers a coffee service to wholesalers and suppliers that can include barista training, account management, marketing assistance, and machine maintenance, ensuring partners get holistic support. The company’s coffee is also Climate Neutral certified and a 1% for the Planet member, ensuring responsible sourcing and reduced carbon footprint. It is also a Q Grader-led roastery, one of the highest certifications available from the Coffee Quality Institute.
